You already have a feeling about MSG. Most people do. It arrives with a faint sense of caution — a thing to ask the restaurant to leave out, a word that sounds like a warning.
Now hold that feeling next to a fact. The same compound your instincts flag is the compound that makes a ripe tomato taste like summer, that gives aged Parmesan its savory pull, that is present in human breast milk. Glutamate is glutamate. Your tongue has never once objected to it in those forms.
So the question is not really "is MSG a chemical?" It is. The question is whether the added, powdered version does something the natural version doesn't. That's the file. Let's open it.

What MSG actually is
Monosodium glutamate is the sodium salt of glutamic acid. Glutamic acid is one of the most common amino acids on Earth — a building block of protein, present in nearly everything you've ever eaten that came from a plant or an animal.
Free glutamate is the part your tongue reads as umami: the savory, mouth-filling "fifth taste" alongside sweet, salty, sour, and bitter. When a Japanese chemist named Kikunae Ikeda studied why kombu seaweed broth tasted so deeply savory, he isolated glutamate as the source and, in 1908, named the sensation umami — "delicious taste." A year later, the Suzuki company began selling it as a seasoning under the name Ajinomoto.
That's the whole trick. MSG is a way to deliver, in white crystals, the exact same flavor molecule that already sits inside a tomato. Your body does not chemically distinguish the glutamate in a shaker from the glutamate in Parmesan. It metabolizes them the same way.
Here's the natural glutamate — the free, taste-active kind — in a few familiar foods, per 100 grams (figures compiled by the Glutamate Association / MSGfacts):
- Parmesan cheese: about 1,680 mg
- Ripe tomatoes: about 246 mg
- Human breast milk: about 22 mg
A pinch of added MSG is a smaller number than a good sprinkle of Parmesan. Keep that in your pocket. It matters later.
How the fear started
On April 4, 1968, the New England Journal of Medicine published a short note titled "Chinese-Restaurant Syndrome." It was a letter to the editor — not a study, not a trial, not data. This distinction is the whole story, so we'll be precise about it.
The author, a physician named Robert Ho Man Kwok, described feeling, 15 to 20 minutes after eating at Chinese restaurants in the U.S., "numbness at the back of the neck, gradually radiating to both arms and the back," along with "general weakness and palpitation." He wondered aloud what caused it. He floated several suspects: the soy sauce, the cooking wine, the high salt content — and monosodium glutamate, which he noted was "used to a great extent for seasoning in Chinese restaurants."
That's it. One doctor. A handful of symptoms. A list of maybes, MSG among them, and salt arguably ahead of it.
What happened next is the part worth studying. The journal ran more letters. The press coined "Chinese Restaurant Syndrome" as if it were a diagnosis. The one seasoning on Kwok's list that sounded foreign and chemical — MSG — became the villain, while soy sauce and salt quietly dropped off. A single anecdote, attached to a specific cuisine, hardened into decades of received wisdom. Historians and scientists who have revisited the episode have pointed out how much the panic leaned on the "foreign" framing of the food rather than on evidence.
This is a historical pivot worth marking. The modern belief that MSG is dangerous does not descend from a discovery. It descends from a letter.
The receipts
When suspicion is loud, the useful move is to go find who actually looked, and what they found.
The FDA. The agency classifies added MSG as "generally recognized as safe" (GRAS). On its own Q&A page, the FDA states plainly that although many people identify themselves as sensitive to MSG, "scientists have not been able to consistently trigger reactions." The agency acknowledges it has received complaints of headache and nausea, and that it reviewed them — without being able to confirm MSG as the cause. (If the GRAS label itself sounds like a loophole, we take that phrase apart in what "generally recognized as safe" really means.)
FASEB. In 1995, at the FDA's request, the Federation of American Societies for Experimental Biology delivered an independent review of the evidence. Its conclusion: MSG is safe for the general population at customary consumption levels. It also did something honest — it described a possible "MSG symptom complex," a set of short-term, transient, generally mild symptoms (headache, flushing, sweating, numbness, tingling) reported by some people after consuming 3 grams or more of MSG without food. The report was careful to note that even this was based largely on anecdotal reports and that causation had not been established.
The challenge studies. This is where belief meets a blindfold. In a large multicenter, double-blind, placebo-controlled trial published in 2000, allergist Raif Geha and colleagues tested 130 people who identified as MSG-sensitive, giving them measured doses (up to 5 grams) against placebo, repeatedly. Their finding, stated carefully: large doses of MSG given without food may produce more symptoms than placebo in people who believe they react to it — but the responses were mild, "not persistent," and "not consistent on retesting." When the challenge was repeated, the reactions mostly failed to reappear. When MSG was given with food, the signal faded further.
Put the two halves together, because both are true. A named safety body (FASEB, backing the FDA) concluded MSG is safe at the amounts people actually eat. And named researchers (Geha's team) found that a few sensitive people did report mild symptoms — but only at high doses, on an empty stomach, and not reproducibly.
Now recall the number from earlier: a typical serving of a food with added MSG contains less than 0.5 grams. The dose linked to even mild, transient symptoms is 3 grams, taken alone, on an empty stomach. Those are different worlds.
What we don't know
We hand you the uncertainty too, plainly.
The controlled trials rule out a large, consistent, reproducible reaction at normal dietary doses. They do not prove that no individual ever responds to anything. "Not consistent on retesting" means some people did report symptoms some of the time — the effect just wouldn't hold still under a blindfold. Whether that's a real, rare physiological quirk in a few people or the ordinary noise of expectation and suggestion, the data can't fully separate.
We also can't measure the person who has spent fifty years certain that MSG makes them ill. Expectation is a genuine physical input; it can produce genuine symptoms. That's not an accusation of faking. It's a limit on what a food additive study can isolate.
And the very high-dose animal research sometimes cited — glutamate injected in quantities no eater would approach through food — tells us about pharmacology, not about dinner. It doesn't transfer to a shaker on a table.
So: no consistent harm at the doses in food. A thin, honest maybe at large doses without food. Real gaps around the edges. That is the actual shape of the evidence, and we're not going to round it up into "poison" or down into "perfectly safe."
The pattern
Step back and the MSG story stops being about MSG.
It's a story about how a scare gets built. Start with one anecdote. Attach it to something that already feels foreign. Let a name that sounds like chemistry stand in for a mechanism nobody demonstrated. Repeat it until repetition feels like proof. The evidence catches up years later, quietly, in reports most people never read — and by then the feeling has hardened past the reach of the facts.
