What it is
Sugar wearing three chlorine atoms — sucralose starts as ordinary sucrose, then three chlorines are swapped in, making it about 600 times sweeter and mostly indigestible. Discovered in 1976 when a researcher misheard 'test this compound' as 'taste this compound.' It became Splenda.
Why it's in food
It tastes closer to real sugar than the older sweeteners, survives shelf life without breaking down, and roughly 85% of it passes through you untouched — sweetness your body can't cash. That combination made it the default in protein products and 'zero' drinks.
US vs EU status
United States
FDA-approved since 1998 with a clean regulatory record — the open questions are newer science, not enforcement. A 2022 human trial found sucralose can alter gut bacteria and, in some people, blood-sugar responses; a 2023 study flagged a trace impurity as potentially DNA-damaging in lab tests. The FDA reviewed and held its position. And in 2023 the WHO advised against using any non-sugar sweetener for long-term weight control.
European Union
Permitted as E955 since 2004. The European wrinkle is heat: despite 'baking blend' marketing, Germany's risk agency cautioned in 2019 that high temperatures can degrade sucralose into potentially harmful chlorinated compounds — advice to add it after cooking, not before. An additive marketed for baking that a regulator suggests keeping out of the oven is its own kind of file.

Is sucralose safe?
Every major regulator says yes, and after 25 years nothing is proven otherwise. Can you bake with sucralose?
You can — the question is whether you should. At high oven temperatures sucralose can start to break down, and chlorinated breakdown products are the concern that led Germany's risk agency to recommend adding it after cooking instead. The 'for baking' on the box is marketing; the chemistry has an asterisk.
Does sucralose spike blood sugar?
For most people, no — it's essentially zero-glycemic, which built its reputation. The 2022 trial complicated the story: in a subset of participants, sucralose changed the gut microbiome in ways that measurably worsened glucose responses. Translation: 'zero effect' may depend on whose gut is doing the hosting.
Is it really 'made from sugar'?
That was the famous slogan, and it's technically true — the process starts with sucrose and chlorinates it. The sugar industry sued over the implication, and the result is a molecule your body treats as neither sugar nor food: most of it exits unchanged. 'Made from sugar' and 'is sugar' turned out to be worth a lawsuit's difference.
