What it is
The original artificial sweetener — discovered in 1879 by a chemist who didn't wash his hands before dinner — and the pink packet (Sweet'N Low) on a million diner tables. Around 300 times sweeter than sugar, with the metallic aftertaste that newer sweeteners were invented to beat.
Why it's in food
For most of a century it was the only sugar-free option there was — through wartime sugar rationing and the entire birth of 'diet' food. Today it survives in packets, toothpaste, and medicines, largely displaced everywhere else.
