What it is
The curing agent behind almost every pink processed meat — bacon, ham, hot dogs, deli slices. It fixes the color, sharpens the cured flavor, and does one job nothing else does as reliably: it blocks the bacteria that cause botulism.
Why it's in food
This is the library's most defensible villain. Nitrite isn't cosmetic — it's genuine pathogen control with a century of lives saved behind it. The problem starts after the label: in your pan and your stomach, nitrite can react with meat compounds to form nitrosamines, some of which are potent carcinogens.
US vs EU status
United States
USDA-regulated with strict limits, and required in most cured meats — with a telling companion rule: bacon must also contain vitamin C or its cousin erythorbate, specifically to suppress nitrosamine formation. European Union
Permitted as E250 with tightening limits. In 2015 the WHO's cancer agency classified processed meat itself as Group 1 — a definite cause of colorectal cancer — with the nitrite-nitrosamine pathway among the suspected mechanisms. Europe's 2023 re-review kept nitrite approved while flagging that total nitrosamine exposure across the diet is a genuine health concern. France has moved to cut nitrite levels in charcuterie.

FAQ
If nitrite is risky, why is it allowed in meat at all?
Because the alternative killed people. Nitrite is the reliable barrier against Clostridium botulinum in cured meat, and regulators judge that risk as concrete while the cancer risk is statistical. That's a real trade-off, not a cover-up — this file has a legitimate defense, which most files on this board don't.
Is processed meat really a Group 1 carcinogen like tobacco?
Yes — and the comparison needs its asterisk. Group 1 measures certainty of the causal link, not size of the risk: the WHO is as sure processed meat causes colorectal cancer as it is that tobacco causes lung cancer, but the magnitude is far smaller. Bacon isn't cigarettes. It's also not nothing.
Is 'uncured' bacon actually nitrite-free?
Almost never. 'Uncured' products are typically cured with celery powder — celery being naturally rich in nitrate that converts to nitrite. Chemically identical, sometimes at higher levels, yet the label reads 'no nitrites added' with an asterisk doing heavy lifting. It's the most polished labeling trick in the meat aisle.
Can I do anything about nitrosamines when cooking?
The chemistry responds to heat: nitrosamines form fastest in hard-fried and charred cured meat, which is why gentler cooking helps — and why US bacon is required to include vitamin C compounds that inhibit the reaction. Beyond that, the honest lever is frequency. The dose, as always, writes the file.
