What it is
A workhorse preservative that stops mold and yeast in acidic foods — sodas, pickles, dressings, syrups. Its parent, benzoic acid, occurs naturally in cranberries; the sodium salt is just the soluble, factory-friendly version.
Why it's in food
Acidic drinks and condiments are mold's favorite home, and benzoate shuts that down for fractions of a cent. It's colorless, flavorless at use levels, and cheap — the definition of an invisible additive.

FDA-approved and everywhere. Its scandal was chemical, not regulatory: through the mid-2000s, testing found that in some drinks, benzoate plus ascorbic acid (vitamin C) had reacted to form benzene — an actual known human carcinogen — occasionally above the legal limit for drinking water. European Union
Permitted as E211 across the EU. Its other cameo: sodium benzoate was mixed into the dye cocktails in the 2007 Southampton hyperactivity study — the very study behind Europe's warning label on Red 40 and the Yellows. The dyes took the label; the preservative that was in the same glass walked.
