What it is
The calcium salt of propionic acid — the same acid that gives Swiss cheese its tang and its holes, produced there by bacteria. In bread it's the standard mold inhibitor.
Why it's in food
Bread molds within days; calcium propionate stretches that to weeks without affecting yeast the way other preservatives do. It's why supermarket sandwich bread survives a shipping route that bakery bread wouldn't.
US vs EU status
United States
GRAS with no meaningful restriction, and used broadly across commercial baking. No US regulatory action has been taken or seriously proposed, and it's absent from the recent state-level additive laws.
European Union
Permitted as E282, but narrowly — Europe restricts propionates largely to specified bread and baked-goods categories with defined limits, rather than allowing general use. The more interesting pressure came from Australia, where a small double-blind crossover study published in 2002 linked calcium propionate in bread to irritability, restlessness, inattention, and sleep disturbance in some children. It was small and has never been definitively replicated — but it drove a consumer movement and a market for preservative-free bread that still exists there.
